Can’t Wait to Do This Myself

OK, I can wait; I just don’t want to. But since I have to (wait on an order from Amazon.com, that is), I guess I can do it. *heh*

I have just enough saffron left to try this–popped amaranth seeds–in a mock paella/chicken dish, I think. If not, I suppose I can sub in tumeric for the look, though the flavor will be substantially different to saffron.

Neat thing: amaranth is higher in protein than rice (~28g/cup vs. ~13g/cup) and gluten-free, as opposed to almost all couscous or other mock-grain pastas also used for paellas (as well as being higher in protein). More? Also higher in resistant starch than the other alternatives.

Next, I’ll have to see about popping quinoa… Again, waiting. *heh*

  1. That was neat looking! I’m guessing you got the amaranth off of Amazon? I have some saffron I haven’t used yet that one of my mother’s co-workers (from Iran) gave me…

    1. Lucky you, Nicole. I have to find saffron on close out to justify the expense, but sometimes… *heh* Thinking about getting some saffron crocuses to grow my own, but I’d probably find my brown thumb killing that idea.

      Yeh, Amazon is a great place to buy such stuff, although I’ve found a place that’s relatively local (35 miles) where I can get the stuff (only golden, not red, amaranth), whenever I’m making a jaunt that way for other errands. Yeh, tightwaddery at work: unless I can bundle a bunch of errands at once, jaunting 35 miles for shopping just ain’t a-gonna happen.
