Meatloaf?

No, not this one:

An almost, sort of recipe.

A pound of ground beef
2 eggs
S&P to taste (but at least grind ’em fresh, ‘K?)
a couple cloves of garlic, pressed
1/2 large yellow onion, chopped
a dash or five of Worcestershire sauce
a few dashes of liquid smoke and teriyaki sauce
Mix that all together and press into a loaf pan.
Top it with tomato paste
Cover and bake for 3/4 hour at 350ยฐ Fahrenheit
Uncover and continue baking for another 1/4 hour

Veggie will be french cut green beans with almonds. Nuked from frozen. Maybe some bacon salt on ’em. ๐Ÿ™‚

Oh, and I took some dried potatoes out of a scalloped potato mix* and put in the bottom of the pan. We’ll just have to see how it all turns out, eh?


A better use for ’em than using the mix itself, IMO.

  1. Pretty close to what I do with meatloaf. Lately I’ve been throwing in ground up croutons, whatever is leftover or about to go stale. Topping includes a bit of brown sugar.

    My favorite way to do meatloaf is to mix blue cheese in and top it with hot wing sauce. The hub is not a huge fan of this, so I’ve taken to making our meatloaf in thick patties instead of loaves. His are normal, mine get topped with feta or blue cheese when they come out and then get doused with sauce. ๐Ÿ™‚ He gets ketchup. Plus, they cook quicker in the patty version.

    How did the potatoes on the bottom turn out? Sounds like a good idea.
